Meal Planning: Week of April 6

We spent last week traveling (more on that later), but I made sure to take a few minutes to figure out a menu and grocery list for our first week back home, so that grocery shopping would be a snap (and we wouldn’t resort to ordering pizza our first night back!). I also placed a big order online at Vitacost, re-stocking my pantry with rolled oats, quick-cooking oats, arrowroot starch, canned organic beans, tahini, canned whole peeled plum tomatoes (for a big batch of homemade marinara sauce), and organic whole wheat flour, which I was pleased to see waiting for me on my front porch upon my return. On a side (but related) note, we stopped off at IKEA on our drive home to pick up a few things to give our kitchen a mini-makeover, including some new cupboards to create a bigger pantry. And thank goodness we did! Here is one of the new cupboards filled with goodies from our Vitacost order!

Now back to the menu planning! Here’s what’s on this week’s dinner menu:

  • Chicken Pad Thai Salad
  • Spicy Black Bean Soup with Tortilla Chips
  • Chicken and Vegetable Stir Fry with Brown Rice
  • Chef’s Salad with Homemade Ranch

I couldn’t find a Berkshire Organics basket that quite fit my needs, so I decided to head to their store to select some produce there and then finished my shopping at Guido’s – my favorite local grocery store with tons of wonderful organic real food options. I am on a mission to incorporate as many veggies into my meals as possible, at breakfast, lunch and dinner. I’m proud to say that more than 3/4 of my groceries were vegetables this week!

Another great week on a budget for real food shopping, coming in at around $120, including almost $20 to restock a 2.5 pound jar of my favorite local raw honey (totally worth it!). I even threw in the ingredients for a Greek salad for lunches (which we ate for lunch today – recipe forthcoming), and which Jeff said was comparable to the amazing organic salads at Baba Louie’s – now that’s a compliment!

  2. You inspire me to stay motivated. Sylvia is a huge motivator as well. I am trying to make our food whole, real food, and incorporating as much flavor and fun as possible. I am dying to try your pad thai recipe!
